| Specific Requirements | Exchange Visitors will be introduced to Omni Hotels and Resorts, its culture and Restaurant and Banquet operation through hands on, mentored training activities of our high volume kitchen operation and organizational methods. They will learn large volume cooking & quality production including (but not limited to), hot & sauce production, garde manger, and pastry production. They will learn the production of mise en place for executing a la carte orders, and will focus on high volume, fast paced cooking, learning how to prepare contemporary style menu items using local seasonal favorites, Tennessee specialties, and southern desserts.
